Can I add in to do my spouse's income tax because I started out with only mine? Will it not let me change it?

It will not let me change mine that I have started.

Unfortunately, if you are using TurboTax only, once you start your return just for you, you can't add your spouse afterwards. You would have to start a new return.

If you have already started a preparing a return for just yourself, then click My Returns > Start A New Return at the top of the left side menu to start one for both of you.
