If I could have claimed a non-relative dependent for 2013, 2014 and 2015, but didn't. I claimed single and no dependents. Can I amend those returns to head of household?

I am retired and only have Social Security from now on. For 2014 my CPA added my Social Security to my IRA distribution for total income. Tax was over $10,000.

You can amend to claim that person if he/she meets the requirements to be your dependent.  However, a nonrelative cannot qualify you for HOH.

"I am retired and only have Social Security"

Social security income only becomes  taxable when added to sufficient other income. If it is your only income, and your are single, you are not required to file a tax return. Claiming a  dependent or Head of Household filing status would do you no good.

Why did you even file tax returns for 2013-2015?

The money you hear about people getting for just filing a tax return claiming kids requires you to  have some earned income (wages or self employment). Without earned income, you are not eligible for the "refundable" Earned Income Credit or Additional Child Tax Credit. Furthermore, the child must be a related child, and meet an age requirement. Not just any dependent will get you that money.
