I recently retired and moved out of the US in mid 2024. Do I have to file my taxes with my out of the country address, or can I use my US mailing address?

Use the address you want the IRS to use if they need to mail you a letter or a check.

If you have access to mail that is received at your US mailing address, you can use your US mailing address.  However, the most important thing is to be sure you have access to the mail in a timely manner as this is the address the IRS will use to contact you.
