We are both filing single since we are not married and own a house together. Both of our names are on the deed to the house and on the property tax. Are we both able to claim this on our tax return or only one person?

Only the person who actually paid the tax can claim it on their return.  If you paid it out of some type of joint account, a 50/50 allocation can be used, or any other fair method of allocating it between the two returns.  You both CANNOT claim the full amount.  Only the full amount in total can be claimed between the two returns.
