So for the first two stimulus checks that went out, I wasn't eligible since my parents claimed me as a dependent on their 2019 taxes. This year, I filed my 2020 taxes and selected that I was not going to be a dependent. My parents have yet to file their 2020 tax returns, so their 2019 will be what is looked at. Will I be eligible for the third stimulus since I said I wasn't going to be a dependent or will I still be considered a dependent since that is what I was on my parent's 2019 return?

    You are not considered their dependent since you filed your own 2020 income tax return. You'll get the stimulus.
