Do I have to claim gift cards from survey platforms when self employed?

I was not given a 1099 nec because I did not reach the threshold of 600.

    Yes. You are to claim all worldwide income along with any deductions to which you are entitled. Since you are self-employed and receiving gift cards, you may have some deductions available. Your business expenses may include internet expenses to take the surveys, cost of any apps, fees, etc.
