I did side work with instsacart and not sure if it would be a new employer or freelance?

You are not an employee of Instacart.   You are self-employed as an independent contractor.  You have to enter it as self-employment income.    If you are using online software you need Self-Employed; or you can use any version of the CD/download in order to prepare the Schedule C you are going to need.
