The net payout number would be the amount they paid you minus any fees they withheld from your earnings. 

 

For instance, let's say you earned $10 and they withheld $1 for their fee. Your net payout would be $9.

 

Your 1099-NEC would show $10 because this is your gross earnings from them.

 

Continuing with the example, on your tax return, you have income of $10. Then you also include your expenses on your return. $1 would be the expense for Uber Fees, and maybe you had another expense of $2.  Your net income (or profit) would then be $7. 

 

This is an oversimplified example but I think it will make sense. When doing your taxes, you do not use your Uber net payout numbers.
