I operate a fishing charter business on weekends. I charge a flat rate per trip. What category would it fall under? Professional service or business? I am not a commercial fisherman so I don't think it would fall under fishing.

    You would choose "Business". For tax purposes, designated professionals are defined as accountants, lawyers, dentists, doctors, veterinarians and chiropractors.
