How do I file a final return for a spouse who passed away when all tax returns have been filed as joint returns?  Do I file two returns?

No, just the final year and you will be done.

 

If you remain single, then that would be your filing status (typically).

You can file a joint return for the year your spouse passed provided you did not re-marry.
